Bubbles make a great choice for celebrations, but not all Champagnes offer the brioche flavor. There are two main techniques used to make Champagne. One is the "reductive" style, where less oxygen is used during the winemaking process. This results in a crisper, fresher style of wine. You can find this style in wines like Vilmart or Agrapat.
The other style is "oxidative", where oxygen is welcomed during the winemaking process. This results in a creamier style with hints of caramelization, exotic spices, and dehydrated fruit flavor. Classic Champagnes like Bollinger and Krug, as well as the highly sought-after Grower Jacques Selosse Champagne, are good examples of this style.
