Benchmark recently brought in several special collections, including many highly sought-after Chablis producers. I particularly like Chablis's distinctive characteristics—high acidity, minerality, and crisp freshness, often with flavors of green apple and citrus and sometimes a flinty, almost smoky quality. The region's cool climate, chalky soils, and unique terroir contribute significantly to these qualities.
Chablis wines are classified into several tiers, with the two highest:
Chablis Premier Cru: A step up in quality, showcasing more depth, structure, and often richer flavors with a more pronounced minerality.
Chablis Grand Cru: The highest classification, representing the best vineyard sites in the region. These wines are complex, full-bodied, and age-worthy, with deep minerality and rich fruit flavors.
Chablis wines are typically not aged in oak (though some may see a touch of oak or lees aging), which helps maintain their crisp, clean profile. The wines are excellent pairings with seafood, oysters, and other light dishes such as a fresh baguette and cheeses.
